FARMER'S MARKET VEGETABLE SOUP RECIPE
Frangrant and aromatic chock full of vegetables
Nothing satisfies on a chilly day like this hearty Homemade Vegetable Soup. Seasoned with fragrant aromatics and chock full of fresh veggies, this soup is hearty enough to serve as a main but also makes a delightful starter or side. This wintry vegetable soup pairs perfectly with a slice of fresh bread with heaps of farm fresh butter.
Like any great vegetable soup, this recipe is loaded with some of my favorites and is very simple to prepare. Give your ingredients a quick chop and toss them in. Great for the whole family. Because you will dice the veggies up into small pieces, this makes for a perfect soup for babies who are able to handle pieces of soft vegetables. Can also be pureed if baby is not ready for bite size chunks.
This veggie-packed recipe makes enough for a large family or for a couple of meals. Also freezes well.
FARMER’S MARKET VEGETABLE SOUP
Yield 2 quarts (2L)
Ingredients:
¼ C friendly fat (butter, tallow, lard, coconut oil or advocado oil ~ you choose)
1 large leek, halved, sliced and rinsed of sand
1 medium carrot, diced
¼ lb. mushrooms, sliced
2 small to medium russet potatoes, diced
Sea salt to taste
4 cloves garlic, minced
½ lb. Fresh asparagus cut into bite size pieces
1 TBSP flour of your choice to thicken (optional)
1 ½ quarts bone broth
1 tsp. dried parsley
½ tsp. dried dill
Pepper to taste
Fresh chopped chives and raw cheese to garnish (optional)
Melt the friendly fat in a soup pot, add the leek, carrot, mushrooms and potatoes with a big pinch of sea salt to soften and sweeten the veggies. Cook the veggies over medium heat for about 10 min. until everything gets soft and almost caramelizes.
Add the garlic and asparagus, cook 5 minutes until the asparagus is bite-tender but still bright green.
Put the flour in if you choose to use it, stir to incorporate and cook for a minute.
Add the bone broth and seasoning and bring to a low simmer for 5 to 10 min.
Serve with fresh chopped chives and grated fresh raw cheese to garnish.
Note: The flour is optional as the soup is delicious without it as well. If serving to baby under age 1 that has a grain free diet, you can use tapioca or arrowroot starches. If the family tolerates grain and baby is over age 1, you can use white rice flour.
Sliced radishes work well with this soup and add a splash of color.
